4 eggs
1 small ricotta cheese
2 cups flour
2 tsp. baking powder
pinch of salt (optional)


Beat eggs, add ricotta and mix until smooth.
Add dry ingredients a little at a time and mix thoroughly. Batter will be sticky.
Drop by teaspoonfulls into hot oil.
Cook until golden.
Sprinkle with confectionary sugar, honey or granulated sugar.
Best when eaten hot.
These are best cooked in a deep fryer and do not overcrowd when cooking, just a few at time.
