Eggplant Rollups

Ingredients:

1 eggplant
flour
olive oil
riccotta cheese
grated cheese
eggs
salt
pepper
parsley
marinara sauce

Directions:

Slice an eggplant and dip in flour and egg.
Fry in olive oil.
Meanwhile make a mixture of ricotta, grated cheese, eggs, salt and pepper, and parsley. (Same mixture as lasagna)
Place a tablespoon on each slice of eggplant and secure with toothpick.
Spread a marinara sauce in the bottom of casserole.
Place eggplant roll-ups and spread sauce over top.
Bake in 350 degree oven for 45 minutes.
