Manicotti Shells


4 eggs
1 cup water
1 cup flour
pinch salt


Mix water, flour and salt together.
Add eggs one at a time and mix after each addition. Mixture will be thin.
Grease a small skillet or crepe pan. You do not need to grease it again.
Depending on how thick/thin you want your shells, you will have to experiment with the amount of batter you use. I would start out with about 1/8 of a cup.
Drop batter into skillet and pick up pan and slide batter around until it looks like a crepe.
Cook until sides bubble up and the crepe is firm enough to flip.
Flip crepe and cook on other side for less than a second.
Transfer crepe to a paper towel to cool.
This recipe will make approximately 20 crepes.
